CJ was a pleasure to work with. He arrived on time, was courteous, and did the work exactly as he said he would. He sharpened my kitchen knives, a pair of dog nail clippers, and two landscape tools, one of which was a pair of hedge trimmers that had seen far better days. As someone who has invested a lot into various knives over my culinary career I am so glad someone like CJ is here in Orlando. He not only repaired a chip on my Masanobu, but made it cut like new. On top of that, my other paring knives and French chef knives cut with surgical precision. Amazing work and affordable. Not only that, but his turnaround was day of. Impressive.

I cook and it is imperative I have my knife set extremely sharp to do my job. Try cutting a hundred tomatoes or filleting a pepper with a dull knife. I called him at 3:45 pm, and I have never had my knives sharpened because I do it myself, and he said I could show up to his trailer and he would sharpen it while I waited! And it was late too. Fair price too! My tools are so beautifully sharp. Hes now my go-to for years to come. Hes also a vet! I highly recommend this experienced professional.

I recently took my 8 Shun Western Style Chef knife to CJ to have him fix the botched sharpening job done by Williams-Sonoma. He reset the edge to the 16 degree angle specified by Shun and sharpened it with a finer and finer grit all the way down to a strop! My knife is now super sharp. I will be returning to CJ with all my knife sharpening needs in the future. Thank you CJ!

I called CJ at 10 pm on a Saturday, he answered and promptly set an appointment that worked for both of us, even offering to come to my house to work on my Chefs blade that was in desperate need of professional work! CJ spent close to an hour with my one blade and it is as sharp (if not sharper) than it was when I bought it! I will refer CJ to all of my colleagues and look forward to seeing him again any time I need work done!
